Curries are the ultimate comfort food, ideal for autumn and winter evenings. What’s more, cooking a curry requires hardly any washing of dishes, making it perfect for camper trailers with limited space. Like a stir-fry, curries can easily be cooked for one or 100 people, making them ideal for batch cooking. Perhaps you’ll just cook up one pot of curry at the beginning of the week to see you through to the remainder of your stay. Just make sure you have enough rice, naan, and poppadums to accompany it! P.S. don’t be afraid if you can’t handle spice too well, curries can be sweet and mild as well as hot and spicy!
Pasta Bake
Last but not least is a simple pasta bake, wherein the dish size will determine how many portions are there. Simply throw in some pasta, maybe some of your favorite veggies, cover in sauce, and sprinkle with cheese. Voila, your pasta bake is ready for the oven. Accompanied with doughy garlic bread and a side salad, you can’t go wrong. This is another one that you can batch cook at the beginning of the week and heat up each day.
